An ancient grain which is a type of grain and has a low gluten content. Scientific name is Titricum spelta. Has a very high water solubility so the nutrients are easily absorbed by the body.

Generally sold as flour used in bread, pasta, biscuits and crackers.

Some people find it easier to digest than wheat.
