How to Use Dark Red Kidney Beans

Dark red kidney beans are delicious in Mexican chilli, hearty vegetable soups, Indian-style bean curries, rice dishes and fresh bean salads. They also work beautifully in homemade burgers, wraps and vegetarian casseroles.

Preparation: Sort and rinse the dried beans, then soak them in water, preferably overnight. Drain and rinse before cooking in fresh water. Bring to a rolling boil for at least 10 minutes, then continue cooking until completely tender. Never cook dried kidney beans only in a slow cooker, as slow cookers may not reach a high enough temperature to destroy naturally occurring toxins.
